This is a course on traditional Roman cuisine delivered by a professional Italian chef, the recipes include pasta dishes, meats and desserts. Roman cuisine is traditionally very poor, extensive use of Pecorino cheese and pork is made, as all Italian cuisine the focus is on the quality of the ingredients, the way they are processed in the kitchen.
