Thee is een veel voorkomende drank gemaakt van weken verwerkte Camellia sinensis-bladeren met heet water. Er zijn twee hoofdvariëteiten van Camellia sinensis:
De eerste variëteit is Camellia sinensis var. sinensis, die thee produceert die helder en fris tot rijk en moutig van smaak is. Deze kleinbladige plant wordt meestal gekweekt in bergachtige streken met een koel en mistig klimaat, zoals in China, Taiwan en Japan.
De tweede variëteit is de Camellia sinensis var. assamica, die thee produceert die zacht en grasachtig tot levendig en moutig van smaak is. Deze plant is grootbladig en wordt meestal gekweekt in tropische gebieden zoals India, Sri Lanka en Kenia.
Ondertussen zijn er zes hoofdsoorten thee: wit, geel, groen, oolong, zwart en puerh. Elke theesoort heeft zijn eigen unieke verwerkingsmethoden en zettijden.
