Vasten is het opzettelijk afzien van eten. In een fysiologische context kan vasten verwijzen naar de metabolische status van een persoon die 's nachts niet heeft gegeten, of naar de metabolische toestand die wordt bereikt na volledige vertering en absorptie van een maaltijd. Tijdens het vasten treden verschillende metabole aanpassingen op. Sommige diagnostische tests worden gebruikt om een ​​nuchtere toestand te bepalen. Er wordt bijvoorbeeld aangenomen dat een persoon aan het vasten is als er 8–12 uur zijn verstreken sinds de laatste maaltijd.
